Harrisa Teriyaki Salmon with Spring Salad
Serves 2
- Ingredients:
- 2 atlantic salmon filets
- Teriyaki
- olive oil
- Harrisa
- garlic powder
- salt and pepper
- honey
- arugula
- 1 apple
- ~10 sugar peas
- 1 avocado
- Fresh mint
- vegan green goddess dressing from whole foods
Procedure:
- Mix 2 tbsp of teriyaki, 1 ½ tbsp of honey, harrisa (I used ~1 ½ tbsp), garlic powder, salt and pepper
- Drizzle salmon with olive oil and coat in marinade
- Preheat oven to 350 degrees fahrenheit and let marinate in fridge for 30 min (if time permits)
- Once marinated, place in oven for about 25 minutes
- Finely chop apple, mint, snap peas, and avocado
- Mix veggies and arugula
- Top with ~ 1 tbsp vegan green goddess
- Once salmon is ready take out and let cool
